Here’s a cookery video I filmed when I was in Sri Lanka in Summer 2016. My aunty has an outdoor kitchen! Pol sambol is a fiery coconut side dish which has three types of chilli in it. I like it on fluffy white bread with lots of butter and then the sambol sprinkled on top. Ingredients below the video.

2 cups scraped, fresh coconut or desiccated coconut (add 1/4 cup of warm water and mix well to moisten the desiccated coconut).
2 small shallots, diced.
1 small green chilli, sliced.
2 tsp hot red chili powder
1 tsp hot chilli flakes
1 tsp Salt.
1-2 tsp Maldive fish (optional).
Lime juice
